I had mentioned that I lost my dad to cancer recently and life’s been rough and pointless since then.. I have been shutting myself away from everyone and living in my own cocoon.. It’s impacting me not just emotionally but also mentally and physically.. I’m losing hair at an alarming rate, my stomach and head hurts all day when I sob.. I’m struggling to deal with the loss and sadly, I’m not able to express it orally to anyone.. Until last week, I din’t feel like cooking/ blogging/watching TV.. Everyone deals with the pain of loss differently, it’s a learning process for me. And, I have realized that I need to find happiness in simplest of things and try to live life one moment at a time..
I have decided to cook something that my dad likes, so that I’d get the motivation to cook something everyday.. I’ll also try to blog the recipe.. So for today, I made this delicious vegan smoothie.. Growing up, my dad used to feed us a lot of avocados in the form of ice-cream, pudding, milkshake/smoothie.. So I came up with this smoothie for today which is loaded with spinach, pineapple, avocado(no points for guessing that), almond milk and lots of memories.. We had this smoothie after our evening walk, not only this smoothie was delicious but it was super refreshing and energy-boosting..
(Makes 2 cups)
- Avocado(pitted) – 1
- Pineapple(peeled and chopped)- 2 cups
- Organic Spinach- 2 cups
- Almond Milk- 1.5 cup
In a blender, add in all the ingredients and blend until all the ingredients are well combined. I like the texture to be creamy and thick. You may add more milk if you want to thin the smoothie..
- You may add sugar if you want it sweeter.
- You may add some chia seeds.
- You may add a scoop of protein powder.
