Beetroot Hummus

I’m that annoying kid who is a picky eater and hates vegetables. But since the time I started cooking, I’ve figured a way to eat my veggies. I either mash them and make cutlets, puree them into a smoothie or grind them to a hummus where you can’t really taste the veggies but all the goodness are getting in. So yeah, I’m proud of myself. 😀 I have made roasted beetroot hummus and roasted red pepper hummus, this time I just microwaved beets for couple of minutes and pureed it along with the rest of the ingredients. Absolutely loved the taste and look at that color!! Here’s how I make it. beetroot_hummus You will need
  1. Chickpeas- 1 cup, boiled and skin removed
  2. Beetroot- 1/2, peeled and roughly chopped
  3. Yogurt- 1 tbsp
  4. Garlic cloves- 2
  5. Jalapeno- 1, you can substitute with chilis or red chili powder
  6. Olive oil- 1 tbsp
  7. Salt- to taste, add less, you can always taste and add later if needed.
  8. Water- 1-2 tsp
  9. Optionally, you can add 1 tsp tahini paste and can drizzle some lemon juice but I din’t do it.
  • Fill a microwave safe bowl with some water and add roughly chopped beetroot to it and microwave for 2 mins.
  • Drain the water and add the beets to a blender and add in the rest of the ingredients.
  • Grind it until it’s evenly combined and creamy.
  • At this point you can taste and adjust salt and spice accordingly.
  • Serve with pita chips or spread it on a sandwich. You can also use it as a pasta sauce. Healthy and yummy! Enjoy!
