Creamy Broccoli Soup in Instant Pot

I have been binge-using Instant Pot today, made paneer biryani for lunch and then made this broccoli soup for dinner. We love soups for dinner especially in Winter! I made it in less than 30 mins start to finish and it did really taste good even without cream or cheese. So here’s how I make it. Check out my other instant pot recipes here. You will need
  • Broccoli- 1 head
  • Onion- 1/2 of a big onion, chopped roughly
  • Garlic- 2 pieces
  • Oil/butter- 2 tsp
  • Milk- 2 cups, I used 2%
  • Water/vegetable stock- 2 cups
  • Pepper powder- 2 tsp or as desired
  • Salt- to taste
  1. Separate the florets, add it to a bowl with some water and microwave for 1-2 mins. Let it sit in the water.
  2. Meanwhile, click on ‘saute’ mode and add oil to the inner pot.
  3. Add in chopped onions and garlic and saute until onion turn soft.
  4. Drain the water from the broccoli and add them to the innerpot.
  5. Add in milk, 1 cup of water/stock and pepper to it and mix well.
  6. Let it cook on ‘saute’ mode for 15 mins, mix once in between and turn it off.
  7. Now transfer this to the blender and puree it once it’s not-so-hot to handle.
  8. Transfer it back to instant pot, turn on the ‘saute’ mode, wash the blender with the rest of the water/stock and add it to blender. Let’s not waste one bit. 😛
  9. Add in salt, mix well and do a taste test. Add more salt/pepper if needed and mix well.
  10. Turn it off and transfer to a serving bowl.
  11. Serve hot with croutons on top. Enjoy! 🙂
