Arachuvitta Sambar in Instant Pot.

I’m a big fan of arachuvitta sambar, I just can’t enjoy regular sambar as much as I enjoy this. I use both freshly ground masala AND sambar powder to make this. I have tried this sambar in Instant Pot 2-3 times and it came out perfect. I have used homegrown radish in this sambar, you can use other veggies like drumstick, okra, capsicum, shallots, etc. Tastes best when served with hot steamed rice/idly/dosai. You will need Toor dal- 3/4 cup Onion- 1, roughly chopped Radish- 3, sliced Sambaar powder- 3 tsp Tamarind- 1 small lemon size, extract juice out of it. oil- 2 tsp Mustard seeds- 1 tsp Turmeric powder- 1/4 tsp Red chili powder- 1/4 tsp Curry leaves- a bunch Hing- 1 pinch Salt- to taste To roast and grind Coriander seeds- 4 tbsp Red chilis- 5 Chana dal- 2 tsp Coconut- 1/2 cup Oil- 1/2 tsp METHOD
  1. Heat 1/2 tsp oil on ‘saute’ mode. Add in other ingredients mentioned in ‘To roast and grind’. Fry for 2 minutes and transfer it into blender and grind it with some water into a smooth paste. keep it aside I love the aroma of this paste so much that it takes me to some kinda heaven. lol
  2. Meanwhile,( still in saute mode) add in 2 tsp oil/ghee to the innerpot and add mustard seeds, hing and curry leaves. Add in onions and fry until they are soft, add in radishes and fry for another few mins.
  3. Add in turmeric powder, red chili powder and sambar powder and mix well. Add in washed and drained toor dal and the ground masala.
  4. Click on ‘cancel’ and add in tamarind extract, salt and around 3-4 cups of water and mix well. Close the lid and secure it. Turn the valve to ‘sealing’ mode and cook in ‘manual’ for 8 minutes and Quick release after 5 mins. Serve with hot steamed rice. Enjoy!
