Quarantine life hits hard on us sometimes and my way of burning stress is by cooking/baking. I love recipes that are simple yet the result is delicious. Once such recipe is this filter coffee mocha ice cream. I have already shared the recipe for mango ice cream, the base recipe is just the same and the flavor that we use here is filter coffee decoction (brewed coffee/espresso) and cocoa powder. Isn’t that the best combination ever? Even better when had in a soft serve ice cream form.
You will need
Heavy whipping cream- 1 cup
Cocoa powder- 1/3rd cup (You can alternatively use chocolate syrup or melted chocolate)
Filter coffee decoction- 2-3 tsp
Condensed milk- 1/4th cup
Chocolate chunks- few (optional but highly recommend)
- In a bowl, add in whipping cream and beat it with a whisk until stiff peaks are formed.
- Add in condensed milk, cocoa powder and filter coffee decoction and mix gently until well combined.
- Add in chocolate chunks if using.
- Pour the mixture into a air-tight container and freeze it for atleast 4 hours but preferably overnight.
- Scoop it and enjoy.
